Allulose, also known as D-Allulose, or Psicose, is a C-3 epimer of D-Fructose, rarely existed in the nature. It is a low-calorie sweetener. In 2011, Allulose is approved by FDA as an addictive applied to food and diet. It is one of the ideal substitute of sucrose as its high sweetness, good solubility, low calorie and low glycemic response. In addition, the structure and characteristics of Allulose are very stable, with strong chemical inertness, and can maintain its original state even under acidic or alkaline conditions, with higher stability than sucrose.
