Isomalto-oligosaccharide (IMO) is a white powdered starch sugar product made from starch or starchy raw materials through a series of processes including enzymatic conversion, refining, and concentration. Its main components are oligosaccharides composed of isomaltose(IG2), panose(P), isomaltotriose(IG3), and isomaltotetraose(IG4) (and higher oligosaccharides) linked by α-1,6-glycosidic bonds. It has excellent thermal and acid stability.
