What is Polydextrose?
Polydextrose is a water-soluble dietary fiber made from glucose, sorbitol, and citric acid, mixed in a specific ratio and polymerized under high temperature and vacuum conditions. Polydextrose is an irregular condensed polymer of D-glucose, mainly bound by 1,6-glycosidic bonds, with an average molecular weight of about 3200 and a limit molecular weight of less than 22000. It is a functional food component that provides essential water-soluble dietary fiber for the human body.
